INTRODUCTION
Moimoi is a Nigerian steamed bean pudding made from a mixture of washed and peeled black eyed peas, onion and fresh ground peeper (usually combination of bell pepper and chili or scotchbonnet). (Dewitt and Dave )it is a protein rich food that is a staple in Nigeria. It originated from west Africa (Elle 2011).Moimoi is a delicacy in nigeria.it can be cooked tied in a cellphone bag, wrapped in broad leaves or even in empty cans.
When cooked soft, it serves as a side to other meals. Moimoi usually comes in a slanted pyramid shaped when made with banana leaves or cylinder shape owing to the mold; it is poured into prior cooking. The cylindrical shape comes from empty cans of tomato sauce or cans of liquid milk used in the preparation of other dishes.(NZEAKOR 2014).
Moimoi is an African bean dish precisely from Nigeria,whish is prepared from a mixture of blended onion,pepper, and peeled beans etc.Although it is believed thatMoimoi is originated from eastern part of Nigerian (Igbo land or Ibo land) presently; this dish has now become a popular dish all over Nigeria and even beyond. Moimoi is an excellent source of protein which is highly recommended for the building blocks of the body apart from being healthy ( Okpala 2015).
Moimoi is prepared by first soaking the beans in cold water until they are soft enough to remove the fine outer covering or peel. Then are dried and ground or blended, grinding and sieve until a fine powder is achieved. Salt dried powdered pepper, condiments Maggi ,palm oil, cry fish powdered and other seasoning are added to taste.
And water is added to make paste and stir very well, line the base of the pot with foil paper or some other Moimoi leaves; pour in some water and set to boil, when the water is boiling, place the sealed Moimoi into the pot or steamer and leave to steam.as the Moimoi start to cook, add a little quantity of water from time to time, so that it does not begin to burn underneath.
After 40 minutes, put a knife through the Moimoi;if the kn/ife comes out cleaned, then the Moimoi is ready.(note that cooking time for Moimoi depend on the type of container using and also on the quantity of the Moimoi you are cooking),take out the Moimoi from the pot and leave to cool a bit before un wrapping or turning it onto a plate.(Elle 2011).
Beans are high in fiber(soluble and insoluble) A cup of cooked blacked eye beans has 9.4grams of fiber, it helps lower cholesterol thereby lowering risk of heart disease.it is high in protein (for building and repair of body tissues among other thing).
Moimoi contain folate(for body tissues that have fast cell production and turn over, such as bone marrow and the intestinal tract).beans also contain potassium (for the proper function of cell tissues and organs in the body).Healthy adult need at least 200milligrams per day and 1cup of black eyed peas provide over 2297milligrams.(9jafoodie,2011).
