A research on the comparative study of locally prepared tiger nut milk obtained from two different units CST and COE and the one produced by the researcher at Kaduna Polytechnic. The proximate and microbiology` analysis of the samples were determined using standard methods. The result reveals sample C has the highest percentage of the nutrient, protein (2.98%), carbohydrate (18.72%), fat (2.0%), Ash (0.4%), crude fiber (0.90%), energy value (104.8kcal), and the moisture has less value (75%).
In terms of microbial load sample A and B have the highest colonies count, in the enumeration of mesophilic aerobic bacterial, (2.6×107 and 2.2×107cfu/ml), yeast and mould (2.9×103 and 2.0×103cfu/ml), coliform count (1.5×106) for both sample A and B, which is not save for consumption and is not within the permissible level. The presence of some organism could render a beverage unsuitable for consumption. The micro organism discovered were Sterphylococci, E.coli, Baccilus, Klebsiella species. School authority should intervene to safeguard student by setting standard.

Introduction
1.1 Background of the study
Tiger nut is commonly known as earth almond, chufa and Chewfa .it is known in Nigerian as “Aya” in Hausa, “Ofio” in Yoruba and “Akiausa” in lgbo where three varieties (Black , brown ,yellow) are cultivated . Among these only two varieties yellow and brown are readily available in market (Okafor, et al 2003).
Tiger nut milk has been found to be good preventing arteriosclerosis since its consumption can be help prevent heart problem and thrombosis and activate blood circulation (Chukwuma and et al 2010). Tiger nut milk can be consumed by diabetic patients for its low content in glycemic carbohydrate (mainly starch) and due to its Arginme which liberates hormones that produce insulm (Alergies, Toran and Farre – Rovira, 2003).
Tiger nut milk is also a suitable drink for celiac patients who are not able to tolerate gluten and also for lactose intolerance who stay away from cow’s milk and many diary foods, it cow also be recommended for those who have problem with digestion flatulence and diarrhea become it provides some digestive enzyme like catalase lipase and anaylase (Banquet –Jimenez 2003; Adejuyitan 2011).
Tiger nut can be eaten raw roasted dried baked or be made into milk Tiger nut milk is very nutritive and energetic drink both for young and old. It is tremendously high in starch, glucose and protein .Also rich in minerals like potassium, phosphorous and vitamin C and E. it contain large amount of oleic acid and is cardiac preventive .it defends the internal mechanisms . Tiger nut milk has never be found to produce allergy (Belewu and Abodurin, 2007).
